Brooke's Crab Salad

2 - 8oz bricks of cream cheese 
1 lb of imitation crab (sea blends is the best) 
the greens of 2 bunches of green onions (rinsed and sliced into rings) 

mix with your fingers and add 1-2 tablespoons of lemon juice. the longer it sets the better it gets. :)

American Sandwich Bread

American Sandwich Breadfrom America's Test Kitchen

1 cup milk, warm
1/3 cup water, warm
3 tbsp. + 1 tsp. unsalted butter, divided
3 tbsp. honey
3 3/4 cup bread flour, plus more for workspace
2 1/4 tsp. instant or rapid-rise yeast
2 tsp. salt

1. In a large liquid measuring cup whisk together the milk, water, 3 tablespoons butter, and honey. Microwave or put into saucepan to heat until liquid is warm (115-120 degrees) and butter is melted.
2. In the bowl of a stand mixer, mix 3 1/2 cups flour, yeast, and salt together using the dough hook. Turn the mixer to low and slowly pour in the milk mixture. Mix until dough comes together, about 1 minute, scraping down the bowl as needed.
3. Increase the speed to medium-low and kneed until the dough is smooth and elastic, about 7 minutes. If after 4 minutes, more flour is needed, add remaining 1/4 cup, 1 tablespoon at a time. Dough should stick to the bottom of the bowl but not the sides.
4. Once dough is smooth and elastic, remove and knead by hand to form a smooth round ball. Place dough in a lightly oiled bowl and wrap with plastic wrap. Let rise in a warm place until doubled in size, 1 to 1 1/2 hours.
5. Once dough has doubled in size, turn out onto a lightly floured workspace and press into a 7-inch square. Starting with the edge closest to you, roll it into a tight cylinder, tucking the ends in but maintaining the cylinder shape. Pinch the seam closed and place seam side down in a 9-inch loaf pan. Cover with plastic wrap and allow to rise in a warm place until doubled in size, 1 1/2-2 hours
6. Place an oven rack in the middle position and heat oven to 350 degrees. Brush top of dough with 1 tsp. melted butter. Fill another loaf pan halfway with water and place on rack in oven. Place dough filled loaf pan next to water filled pan and bake for 40-50 minutes, until bread is golden and an instant-read thermometer measures at 200 degrees.
7. Let bread cool in pan for 30 minutes before removing to a wire rack to cool completely.

Herb Rubbed Sirloin Tip Roast

"Intensely flavored sirloin tip roast using a homemade herb rub paste that is certain to please the entire family."
Ingredients:
1 1/4 tablespoons paprika
1/2 - 1 tablespoon kosher salt
1 teaspoon garlic powder
1/2 teaspoon ground black pepper
1/2 teaspoon onion powder
1/2 teaspoon ground cayenne pepper
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
2 tablespoons olive oil
1 (3 pound) sirloin tip roast
Directions:
1. In a small bowl, mix the paprika, kosher salt, garlic powder, black pepper, onion powder, cayenne pepper, oregano, and thyme. Stir in the olive oil, and allow the mixture to sit about 15 minutes.
2. Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
3. Place the roast on the prepared baking sheet, and cover on all sides with the spice mixture.
4. Roast 1 hour in the preheated oven, or to a minimum internal temperature of 145 degrees F (63 degrees C). Let sit 15 minutes before slicing.

Olive Garden Alfredo Sauce

Ingredients

  1. 1 1/2 cup milk
  2. 1 1/2 cup heavy cream
  3. 1/2 cup imported Parmesan cheese, grated
  4. 1/2 cup imported Romano cheese, grated
  5. 6 egg yolks from fresh jumbo eggs
  6. Salt and black pepper to taste

Procedures

  1. HEAT milk and cream in a heavy bottom saucepan until it begins to simmer. Turn off heat. Slowly whip in cheese, then remove from heat.
  2. PLACE egg yolks in a separate bowl and slowly whip in a portion of the hot milk and cream mixture. Slowly add egg yolk mixture back into remaining cream mixture. Place back on very low heat and continually stir until simmering. Take sauce off heat so it thickens. (This will increase temperature of egg yolks, known as tempering).
  3. SEASON to taste with salt and black pepper. Serve over your favorite pasta.

Wassail

Simmer the following for 30 min:
1 1/2 c. Sugar
3 c. water
3 cinnamon sticks
4 whole cloves

Then add:
1 c. orange juice
4 c. apple cider
2 quarts water
1 c. lemon juice
2 c. pineapple juice

Reheat, but avoid boiling.

(Will fill a large crockpot)

Bosch Foolproof Whole Wheat Bread

*Makes 6 loaves

6 cups warm water
2 1/2 tablespoons instant yeast
2 tablespoons salt
1/2 cup oil
2/3 cup honey
2 tablespoons vital wheat gluten
12-15 cups whole wheat flour

Mix 8-9 cups fresh wheat flour and 2 ½ tablespoons yeast together in the bowl of an electric mixer (or in a large bowl by hand). Add 6 cups warm water and mix to paste consistency. Cover and let sponge 10-15 minutes. Add salt, honey, oil, and gluten. Mix by hand or if using an electric mixer, turn to speed 1 or 2 as motor bears down and add additional flour until dough pulls away from sides of bowl (be careful not to add too much flour). Let the mixer knead the dough for five minutes. (If using hands, knead for 10 minutes.) Use oil or cooking spray on your hands to form six equal loaves. Take dough immediately from bowl and fill lightly greased (or nonstick) loaf pans ½ to 2/3 full. Cover with lightly greased plastic wrap to keep moist. Let the bread rise until doubled, approximately 1 ½ inches above the top of the pan. Place the bread carefully in a cold oven. Turn the oven to 350 degrees and bake for 38 minutes. Let cool completely before placing in bags to put in the freezer.
